I love making sugar cookies for every occasion and every holiday. They are fun, easy and there are so many options. I use this very basic cookie recipe and frost them with royal icing. I have been using this recipe for about five years, and they turn out every time.
The Best Sugar Cookie Recipe
-1 Cup unsalted butter (226 grams) softened
-1 Cup granulated white sugar (200 grams)
-1 teaspoon vanilla extract
-1 teaspoon almond extract
-2 teaspoons baking powder
-1/2 teaspoon salt
-3 cups all purpose flour (360 grams)
Preheat oven to 350 (f)
Add egg, vanilla extract and almond extract. Mix.
In a separate bowl combine baking powder, salt and flour.
Add slowly to wet ingredients.
There is NO need to chill the dough. Divide into batches (2-3 parts). Roll on floured surface to about 1/4 inch thick and cut with cookie cutters. You want them to be thicker.
Bake at 350 for 7-10 minutes. Let cookies cool on baking sheet before moving.
Wilton Royal Icing Recipe
-4 cups confectioner's sugar
-5 Tablespoons warm water
-3 Tablespoons meringue powder
Beat together all the ingredients, 5-7 minutes in stand mixer or 7-10 minutes with handheld mixer. Beat until stiff peaks form and icing looks "fluffy".
Separate icing in different bowls depending on how many different colors you are making. Mix in Wilton gel food coloring and water to get the right consistency. You don't want your icing to be too runny but also not too thick. I like to use these tipless piping bags. A fun trick I learned was to put the bag in a tall glass so that it is easier to fill with the icing. I like these clips too so the icing doesn't leak out when piping on the cookie. Have fun with it!
